This speciality microlot is grown in the Finca Lerida plantation in Panama, which is known for its deep, rich volcanic soil and elevation between 1550 and 1850 meters on the slopes of Volcan Baru. The beans are of the Catuai variety and are washed.
Cupping notes
The coffee has a dark chocolate, maple syrup, juicy flavor profile with a bit of raisin and prune like notes.
Remember to always dial in your recipe according to taste.
Coffee constantly changes, especially as it matures and as it is degassing.
Don’t fixate on the numbers. Just experiment, adjust one variable at a time, and find out what works for you.
